Shrimp, Zucchini & Spinach Sauce



This is a really easy sauce that could easily go with any pasta, rice (& other cousin grains) Or over mashed sweet potatoes, spaghetti squash, cauliflower rice or mash… Basically over anything your heart ❤ DESIRES!!! Now let’s get to it!

You’ll Need:

– 1lb frozen shrimp

-1 26oz jar of organic marinara sauce (no salt added-optional)

-1/2 tsp chopped garlic

-1 zucchini-chopped

-2 cups freshly chopped spinach

-1/4 a yellow onion-chopped

-1 Tbspn EVOO

-Salt, oregano and black pepper to taste

-cayenne pepper (Optional-I ❤ spicy food)

How To:

-Heat up EVOO in a sauce pan and add in chopped garlic and onions

-Cook until onions are slightly translucent and add shrimp and cook for about 5 minutes

-Add chopped zucchini into the mixture and cook for 1-2 minutes.

-Add the marinara sauce, spinach, salt, pepper, oregano and spices at this point and let simmer on low heat for about 12 mins.

-Your sauce is ready to be served over pasta, spaghetti squash or anything else that rocks your boat! 😉
